Creamy Mushroom Stroganoff with Kale

SERVES 4 PREP: 15 MINUTES COOK: 25 MINUTES

This meat-free version of a classic comfort food dish delivers deep, rich umami flavor thanks to meaty mushrooms, including super-flavorful dried porcinis and their soaking liquid. Adding kale rounds out the dish, making it a suitable quick meal.

½ ounce (about ½ cup) dried porcini mushrooms

2 cups boiling water

8 ounces dried egg noodles

3 tablespoons olive oil, divided

8 ounces fresh cremini mushrooms, stems trimmed and sliced ¼-inch thick

1 onion, diced

½ teaspoon paprika

2 tablespoons all-purpose flour

¾ pound kale, tough center ribs removed and leaves julienned

3 garlic cloves, minced

Kosher salt

Freshly ground black pepper

¼ cup dry white wine

2 tablespoons unsalted butter

⅓ cup sour cream

¼ cup chopped flat-leaf parsley, for garnish
